LOVE this cookbook! This is Sri Lankan cooking for Sri Lankans. There is no "adaption" using western ingredients and no substitutions of western cookware. There are no changes to the recipes for western tastes: wow, really, 6 1/2 cups of dried chilies, 3 cups of coriander seeds, etc for a curry powder recipe that can be stored "up to 2 months" or "enough for twenty-five recipes". More than that, the author obviously LOVES the cooking of their country. Recipe after recipe is labelled "delicious" or "this is a treasured dish for parties or weddings".
This book is an honest window into another culture's tastes and way of life. Being a western wimp, I just tried the bread/dosa recipes, and they were excellent. I also respect that the book begins with a short history, with no whitewashing of the recent civil war. So often authors "pretty up" history to present a Walt Disney version of their country.
