Picked this up specifically to make the breakfast to-go option much easier in our household since my kids start school at 7 am and sometimes they are not hungry until mid-morning. So far I've made the breakfast cookie (subbed cooked steel cut oats for the cooked quiona) and made the blueberry maple oatmeal muffins (subbed 1 cup of fresh blueberries for the dried blueberries) and they are a hit. I have single portion servings wrapped in plastic then bagged them all in ziplock bags, all stored in the freezer. I defrost whatever I need the night before and stuff them in their lunches in the morning. Will try cream scones (plan to sub in some wheat germ for the flour) and also the oat jacks next.

Really solid recipes thus far and nutritious compared to the normal cookie/muffin. Highly recommend!
