A common refrain I have heard from people for why they haven't yet adopted a vegan diet, is that they are on a budget and they think it would cost too much. It is easy to think that when you compare the price of vegan cheese alternatives to that of real cheese made from taxpayer-subsidized cow's milk. But there is no need to eat "fake" foods as a vegan and of course the healthiest diet is based on the some of the least expensive foods -- beans, vegetables, and whole grains. In Eat Vegan on $4 a Day, Jones, uses her training in the financial sector to show you just how fiscally savvy eating vegan can be. This book is very hit and miss. Some of the recipes looks very tasty which I admit I haven't tried yet BUT the ones I have tried ended up in the garbage. I have been a chef for 20 years and could not fix some of them like the tofu scramble. It was an abomination -_-
I would rather stick to lots of potatoes and rice with salads.

I just made the Kale soup (with green onions, chopped almonds, diced tomatoes, rice and swapped cannellini beans for garbanzos. Delicious! I used white rice instead of brown, which the recipe calls for, so next time, I will use the brown rice.

The book has no pictures, but is easy to read. The recipes are simple enough for the beginner, and interesting enough for your palate. The steam-fry technique worked well, even with my stainless steel pot (they recommend non-stick).

All the recipes are healthy and really gets you to focus back on the grains and beans. I'm not sure I could do $4/day in Canada, but I know I can bring my food bill down substantially. This is a book I will definitely consider buying.
