Not good for beginner cooks like me. For example, the Fiesta Salad recipe says to peel and dice the potatoes and just dice the beets (shouldn't I peel them?) and then boil them for some unkown time. The mayo recipe says to use firm "silken" tofu but I can only find firm tofu (is that OK to use?). But, the book has some good recipes for the whole food plant based diet. I'm just not confident I can pull them off.
